Well left click you swing your sword, dagger, axe, ect. and right click holds up your shield. All you do is hold up your shield when someone is attacking you and swing your weapon to fight back, sorry it's not rocket science. Block their attacks or bash them with your shield to stagger them and then have at it until they regain their balance.

One handed perks are very limited though. The only one handed perks you really need are the Bladesman and standing power attack one. Sword and Shield is more dangerous than 2H in the long run though. A normal shield bash can stun a dragon quite a bit, power bashing can disarm even Druagr Deathlords, and Shield Charging knocks over the fleeing.

Although Nords get a bonus to One handed, block, and smithing. They also get a bonus to my favorite armor type, light. Beef, stew, Horner, stew, venison stew, and vegetable soup will provide you with all the stamina you'll ever need for shield bashing and power attacks as you only need 1 stamina to do this.
